Cookies for a knit night
Who can say no to some crunchy cookies? On our knit nights there’s always tea and some treats (if it’s not too hot outside 😉 ). Why not make some cookies, you can make them in advance and just store them in an airtight food container until serving.
Crunchy oatmeal cookies
· 100 g butter
· 150 ml flour
· 300 ml rolled oats (uncooked)
· 1 ½ tsp baking powder
· 100 ml brown sugar
· 50 ml white granulated sugar
· 100 ml raisins
· 100 ml of mixed seeds (pumpkin, sunflower, flaxseed)
· 1 Tbsp cold water
Mix all the dry ingredients in a bowl. Cut in butter and until the mixture becomes lumpy, incorporate the water and form a dough.
Roll out the dough and use cookie cutters (or a drinking glass) to cut out cookies. Put on a baking tray that has been lined with non-stick paper. Bake in the oven (200 degrees Celsius) for about 8 minutes or until cookies are golden brown.
